Green Beans and Radish Simplified

Well, after months of being queasy and sick at the very thought of food, I am slowly getting back into the kitchen.  I am wary of going too crazy or overextending myself, but I have managed to put together a couple of simple side dishes for Robert.  Who, to his credit, eats them up greedily.  I think he's ready for a return to mom's cooking.

Our first foray into home cooked meals was a basic green bean and radish sauté.  This is so simple and so delicious.  It is perfect finger food for little toddlers.

Green Bean and Radish Sauté

  • 10-12 green beans

  • 2 medium radishes

  • Olive oil

  • Black pepper

Directions

  • Wash and chop the green beans into small, grab-able pieces

  • Wash and chop the radishes into thin slices, then quartered

  • Heat about 1 tsp of olive oil in a frying pan over medium-high heat

  • Add the green beans and radishes and cook over the medium-high heat until the outsides of the veggies look slightly charred - about 2-3 minutes.

  • Add pepper to taste.

  • Turn down the heat to a low heat and cook until tender - about 8 minutes. Stir periodically to cook evenly.
