It is that time of year in Texas when delicious grapefruit are everywhere. We were gifted with a monstrous pile of locally grown ruby reds, and there are only so many days I can have a grapefruit half as part of my breakfast. Fortunately, my local Whole Foods inspired me to take advantage of a killer organic avocado deal (5 for $5!) and make a simple, refreshing salad.
Avocado and Grapefruit Salad
1 ripe avocado
1/2 -1 whole fresh ruby red grapefruit depending on size
1 Tbs olive oil
1 tsp Dijon mustard
Black pepper
Directions
Wash cut the avocado into strips (Confounded by avocado? Watch this video!)
Cut the strips into small, bite-sized chunks
Wash and cut the grapefruit (I like this method for salads.)
In a small bowl, mix olive oil, dijon mustard, and pepper to create a light vinaigrette
Mix all ingredients together in a larger bowl
The smaller chunks of avocado and grapefruit make this a great finger good. It can be messy, so have wipes close by!
