Peanut Butter, Oatmeal, Chocolate Chip Cookies

This may be the most perfect combo cookie ever!  Back in 2010, the Brown Eyed Baker posted this recipe.  It's good, but with my little tweak, it goes to the next level.  Don't expect them to last long.

Peanut Butter, Oatmeal, Chocolate Chip Cookies

  • 1/2 stick Butter, at room temperature

  • 1/2 cup Cane Sugar

  • 1/3 cup Light Brown Sugar, packed

  • 3/4 cup Creamy Peanut Butter

  • 1/2 tsp Vanilla Extract

  • 1 Egg

  • 1/4 tsp Aalt

  • 1 tsp Baking Soda

  • 1 cup All-Purpose Flour

  • 1/2 cup Rolled Oats

  • 1/2 cup Dark Chocolate Chips

  • 1/2 cup Peanut Butter Chips

Directions

  • Heat the oven to 350.

  • In a KitchenAid, mix Butter, Sugars, Peanut Butter, and Vanilla Extract until creamy.

  • Add the Egg and combine.

  • Add Salt and Baking Soda.

  • Slowly add the Flour and mix thoroughly.

  • Using a wooden spoon, incorporate Oats, Chocolate Chips, and Peanut Butter Chips until just blended.

  • Spray 2 cookies sheets with a non-stick spray.

  • Make large cookies - about 3 tablespoons per cookie - and place 2 inches apart on the cookie sheets. You will only get about 8 cookies per sheet.

  • Bake for 10-12 minutes or until the cookies are a golden brown.

  • Let them cool on the cookie sheet. Chances are you'll eat a few before they make it to a cooling rack!
