Our Farmhouse Delivery bushel keeps sending us cabbage.  I keep giving it away.  Finally I decided that it was some sign that I needed to figure out a way to enjoy cabbage because what on earth does one do with 4 heads of cabbage piling up in the refrigerator?  

I'm starting simple and easy with coleslaw that the kids helped me make - and therefore ate themselves!

Coleslaw

  • 1/2 head green Cabbage

  • 2 large Carrots

  • 4 stalks of Celery

  • 1/2 cup Mayonnaise

  • 2 Tbs Red Wine Vinegar

  • 1 Tbs Coconut Sugar

  • the juice from 1 large Lemon

  • Salt & Pepper to taste

Directions

  • Cut stalk out of the cabbage, then cut the cabbage in half. Take the 1/2 Cabbage and cut thin slices, keeping the Cabbage together as much as possible. Turn the Cabbage 90 degrees, and make another pass of thin slices.

  • Using a Julienne Slicer, slice the Carrots long ways to make long, thin strips. Watch your fingers!

  • Split the Celery stalks in half, then cut into small bites.

  • Mix the Cabbage, Carrots, and Celery together in a large bowl.

  • In a smaller bowl, mix the Mayonnaise, Vinegar, Sugar, and Lemon Juice.

  • Add Salt & Pepper to taste. I went quite heavy on the Pepper with great results.

  • Slowly incorporate the dressing with the Cabbage mixture until you have the desired ratio of greens-to-dressing. Add more Salt and Pepper if needed.

  • Eat immediately! Like most slaws, this is best fresh.
