Garlic Herb Cream Cheese & Smoked Salmon Bites
The kids’ school held their annual holiday party this morning, and parents were asked to bring a plate of finger food to share with others. I put together this simple appetizer that was devoured within minutes. It made me feel good that I did something other than a cheese board for once!
Garlic Herb Cream Cheese & Smoked Salmon Bites
1 loaf of Beer Bread (I’m going to post my recipe shortly!)
1 8 oz package of Cream Cheese
3 Tbls Butter
2 cloves Garlic
2 Tbls fresh Parsley
2 Tbls Green Onion
1/4 tsp Salt
200g Smoke Salmon
Capers (optional)
Directions
Let the Cream Cheese come to room temperature. This may take an hour or more, so be prepared!
Roughly chop the Garlic
Heat the Butter in a small saucepan with the Garlic. Stir frequently until fragrant.
Strain the Butter and Garlic mixture. Reserve the Butter and discard the Garlic after you’ve ensured you’ve got 2 Tbls of the Garlic infused Butter remaining. Put the Butter in the fridge to cool for about five minutes.
Meanwhile, finely chop the Parsley and Green Onion.
Mix the Cream Cheese, Butter mixture, Parsley, Green Onion, and Salt together. I find mashing with a fork to be the best way to mix everything.
Thinly slice the Beer Bread, then quarter the slices.
Spread the Cream Cheese mixture on each slice of bread.
Cut the Smoked Salmon into pieces just large enough to cover the top of the Cream Cheese Mixture.
Top with optional Capers.
You should have enough Cream Cheese and Salmon to pair with the entire loaf of bread - about 80 pieces or so. I would also like to try this with toasted Beer Bread for a little extra crunch!
