Cabbage, Carrot, and Mint Salad

I feel like I've been in a veggie rut lately, and this light salad was a great change in pace.  This would be such an easy dish to take to a potluck because a small amount of work makes a huge quantity of food!

Cabbage, Carrot, and Mint Salad

  • 1/2 medium sized red Cabbage (mixing red and green cabbage is an option!)

  • 2-3 large Carrots

  • 1 cup fresh Mint Leaves

  • 2 Lemons

  • 3 Tbsp Olive Oil

  • 1/2 tsp Salt

  • Black Pepper to taste

Directions

  • Attach the shredding disc to your Cuisinart.

  • Shred the Cabbage and Carrots. You may need to go in batches as this will make quite a lot!

  • Chop the Mint leaves

  • Combine the Cabbage, Carrots, and Mint.

  • In a separate, small bowl, squeeze the juice from the Lemons.

  • Combine with Olive Oil, Salt, and Pepper

  • Drizzle the dressing over the Cabbage mixture.

  • Serve right away, or chill for extra crispness.
