Cabbage, Carrot, and Mint Salad
I feel like I've been in a veggie rut lately, and this light salad was a great change in pace. This would be such an easy dish to take to a potluck because a small amount of work makes a huge quantity of food!
Cabbage, Carrot, and Mint Salad
1/2 medium sized red Cabbage (mixing red and green cabbage is an option!)
2-3 large Carrots
1 cup fresh Mint Leaves
2 Lemons
3 Tbsp Olive Oil
1/2 tsp Salt
Black Pepper to taste
Directions
Attach the shredding disc to your Cuisinart.
Shred the Cabbage and Carrots. You may need to go in batches as this will make quite a lot!
Chop the Mint leaves
Combine the Cabbage, Carrots, and Mint.
In a separate, small bowl, squeeze the juice from the Lemons.
Combine with Olive Oil, Salt, and Pepper
Drizzle the dressing over the Cabbage mixture.
Serve right away, or chill for extra crispness.
