This is one amazing coffee cake from An Italian in My Kitchen! I ended up making 2 in three days because it was so good and kept disappearing.

Cinnamon Cake

  • 1 Cup Milk

  • 1 Lemon

  • 2 Tbs Brown Sugar

  • 1 Tbs Cinnamon

  • 3/4 cup Butter, Softened

  • 1 cup granulated Sugar

  • 2 Eggs

  • 2 cups Flour

  • 1 tsp Baking Powder

  • 1/2 tsp Baking Soda

  • 1/2 tsp Salt

  • 1 tsp Vanilla Extract

  • 1/2 Cup Pecan Bits (optional, but so good!)

Directions

  • In a small bowl, mix the Milk and the juice from the Lemon. Let sit 10-15 minutes, until it is sour milk.

  • Meanwhile, preheat the oven to 325.

  • If you are adding the Pecan Bits, place them in a small sauté pan and toast until fragrant. Remove from heat, and let cool.

  • In another small bowl, mix the Brown Sugar and Cinnamon.

  • In a large bowl, beat together butter and sugar.

  • Mix in eggs.

  • In a medium bowl, sift Flour, Baking Powder, Baking Soda, and Salt. For the record, I usually don't sift together dry ingredients, but for this recipe, it makes a difference!

  • Alternatively mix dry ingredients and sour milk to the Butter/Sugar blend. End with the Sour Milk and cream everything together.

  • Add Vanilla.

  • Grease a 10" springform pan.

  • Pour 1/3 of the batter into the pan. Sprinkle with half of the Brown Sugar/Cinnamon mixture and half of the Pecans. Repeat with another 1/3 of batter and the remaining Brown Sugar/Cinnamon mixture and Pecans. End with the last 1/3 of the batter.

  • Bake for about 35 minutes, or until a toothpick comes out clean.
