Cinnamon Cake
This is one amazing coffee cake from An Italian in My Kitchen! I ended up making 2 in three days because it was so good and kept disappearing.
Cinnamon Cake
1 Cup Milk
1 Lemon
2 Tbs Brown Sugar
1 Tbs Cinnamon
3/4 cup Butter, Softened
1 cup granulated Sugar
2 Eggs
2 cups Flour
1 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
1 tsp Vanilla Extract
1/2 Cup Pecan Bits (optional, but so good!)
Directions
In a small bowl, mix the Milk and the juice from the Lemon. Let sit 10-15 minutes, until it is sour milk.
Meanwhile, preheat the oven to 325.
If you are adding the Pecan Bits, place them in a small sauté pan and toast until fragrant. Remove from heat, and let cool.
In another small bowl, mix the Brown Sugar and Cinnamon.
In a large bowl, beat together butter and sugar.
Mix in eggs.
In a medium bowl, sift Flour, Baking Powder, Baking Soda, and Salt. For the record, I usually don't sift together dry ingredients, but for this recipe, it makes a difference!
Alternatively mix dry ingredients and sour milk to the Butter/Sugar blend. End with the Sour Milk and cream everything together.
Add Vanilla.
Grease a 10" springform pan.
Pour 1/3 of the batter into the pan. Sprinkle with half of the Brown Sugar/Cinnamon mixture and half of the Pecans. Repeat with another 1/3 of batter and the remaining Brown Sugar/Cinnamon mixture and Pecans. End with the last 1/3 of the batter.
Bake for about 35 minutes, or until a toothpick comes out clean.
