Orange Muffins, New Zealand Style
We've arrived in New Zealand and have a teeny tiny kitchen in our AirBnb. After days of jet lag and a trip to Kmart to get some baking basics like measuring cups and a silicone mini muffin pan, I'm ready to bake! Our hosts gave us a huge bag full of oranges from their backyard tree. I put together this recipe to try to make a small dent in this mound of oranges we have to go through now.
Orange Muffins
1 cup Flour
1/2 cup Sugar
1/2 tsp Baking Powder
1/4 tsp Baking Soda
1/8 tsp Salt
1 Egg
1 large Orange (for zest and juice)
2 Tbs Butter, melted
Approx. 1/2 cup Milk
Directions
Preheat the oven to 200 C (392 F)
Spray a 12 mini muffin pan with a nonstick spray or use a silicone pan if available.
Zest the entire Orange, then squeeze all of the juice out of it. You should have around 2 tsp zest and 1/3 cup juice. If you have more or less, it is ok!
Mix Flour, Sugar, Baking Powder, Baking Soda, Salt, Egg, Zest, Juice, and Butter together. Using a wooden spoon works well.
Add milk in until the mixture is slightly runny and smooth.
Equally distribute the muffin batter in the pan.
Bake for 11-13 minutes or until a toothpick comes out clean and the muffins are a rich golden color with slight cracking on top.
I'll try adding nuts or poppy seeds next. These have a lot of potential!
