Lemon Poppyseed Loaf
I was in the mood for something lemon-y, and it was time to bake another loaf of bread for my son to take to school as his morning tea, enter this wonderful Lemon Poppyseed loaf. It was very easy to put together and perfectly moist. It is definitely entering the regular rotation!
Lemon Poppyseed Loaf
1/2 cup Butter, melted
1/2 cup Granulated Sugar
1/2 cup Coconut Sugar
1/2 cup Milk
1/2 tsp Salt
1 tsp Baking Powder
1 Lemon (Rind and Juice)
1 1/2 cup Flour
1 Tbs+ Poppyseeds
Directions
Preheat the oven to 350º and spray a loaf pan with a non-stick spray.
Mix the Butter, Granulated Sugar, and Coconut Sugar under medium speed in a KitchenAid.
Add in the Milk, Salt, Baking Powder, Lemon Rind and Lemon Juice. (Make sure no seeds make their way into the batter!)
Add the Flour in parts until all is mixed in.
Scrape the bowl to make sure all of the Flour is incorporated, then add the Poppyseeds in.
Pour the batter into the loaf pan, smoothing the top.
Bake for 55-60 minutes, or until the top is golden and a toothpick comes out clean.
Add in the Flour.
