Easy as Pie Apple Cake

The New York Times just published a plethora of apple recipes in honor of the beginning of fall.  Our favorite - by far - is the Easy As Pie Apple Cake Recipe.  Seriously.  We've made it twice this weekend and it is only Saturday afternoon.

Apple Cake

  • 1/2 stick Butter, melted

  • 3/4 cup Cane Sugar

  • 1 Tbl Vanilla Extract

  • 1 tsp Cinnamon

  • 1/4 tsp fresh ground Nutmeg

  • 1 Egg

  • 1/4 tsp freshly ground Salt

  • 1/4 tsp Baking Soda

  • 1 cup All Purpose Flour

  • 1 large Apple, finely diced (about 2 cups of diced apple)

Directions

  • Heat the oven to 350.

  • Spray and flour a 9" pie pan.

  • In a KitchenAid, mix the Butter, Sugar, Vanilla, Cinnamon, and Nutmeg until thoroughly blended.

  • Add the Egg and incorporate.

  • Add the Salt, Baking Soda, and Flour. Mix fully. The batter will be thick.

  • Stir in the diced apple using a spatula.

  • Scoop the batter into the pie pan and use the spatula to even out and smooth out the batter.

  • Bake for 40-45 minutes until a toothpick comes out clean.

  • Let sit for about 10 minutes before serving.

  • Serve a la mode or with whipped cream for extra decadence!
