Easy as Pie Apple Cake
The New York Times just published a plethora of apple recipes in honor of the beginning of fall. Our favorite - by far - is the Easy As Pie Apple Cake Recipe. Seriously. We've made it twice this weekend and it is only Saturday afternoon.
Apple Cake
1/2 stick Butter, melted
3/4 cup Cane Sugar
1 Tbl Vanilla Extract
1 tsp Cinnamon
1/4 tsp fresh ground Nutmeg
1 Egg
1/4 tsp freshly ground Salt
1/4 tsp Baking Soda
1 cup All Purpose Flour
1 large Apple, finely diced (about 2 cups of diced apple)
Directions
Heat the oven to 350.
Spray and flour a 9" pie pan.
In a KitchenAid, mix the Butter, Sugar, Vanilla, Cinnamon, and Nutmeg until thoroughly blended.
Add the Egg and incorporate.
Add the Salt, Baking Soda, and Flour. Mix fully. The batter will be thick.
Stir in the diced apple using a spatula.
Scoop the batter into the pie pan and use the spatula to even out and smooth out the batter.
Bake for 40-45 minutes until a toothpick comes out clean.
Let sit for about 10 minutes before serving.
Serve a la mode or with whipped cream for extra decadence!
